At Cyrus Caviar, you can often order 4 types of caviar: Beluga caviar, Suruga caviar, Astra caviar, Berry caviar

In some cases, specific types are produced in limited quantities and made available to buyers.

Caviar, this black gem of the Caspian Sea, has long been known as a symbol of elegance and luxury. Each grain of caviar is the result of years of careful breeding of sturgeon fish and the boundless nature of the Caspian Sea. At Cyrus Caviar, we proudly present this precious gem to you.

Our caviars, made using state-of-the-art knowledge and strictly adhering to global standards, have a unique flavor and texture. From beluga caviar with large grains and a walnut flavor to more affordable berry caviar with a hazelnut flavor, we have prepared a wide range of caviar types for different tastes, and below we will briefly explain each one.

1. Beluga: The most precious and rarest type of caviar with large grains, a nutty flavor, and a buttery texture.

2. Acitra: Sturgeon with a strong flavor and a delicious buttery texture, medium to large grains, and a color ranging from light brown to golden.

3. Suruga: Sturgeon with finer grains, a sweet and mild flavor, and a light to medium gray color.

4. Barry: A more affordable sturgeon, medium-sized seeds and a nutty flavor with a buttery texture.

Below we will provide a more detailed explanation of the types of caviar.

Beluga caviar

The most desirable, most famous, and most popular caviar in the world is Iranian beluga caviar, native to the Caspian Sea.

Beluga caviar, with its large, gray grains, is known as the king of caviars. This caviar is extracted from the elephant sturgeon (beluga sturgeon or great sturgeon or Huso huso or king of sturgeon). The age of maturity of this fish in Iranian farm farming conditions is over twelve years. Due to its very slow growth and late maturity, it is one of the most desirable and famous sturgeon species in the world, originating from the Caspian Sea. The characteristics of this caviar include its large size (3 mm to 3.7 mm), unique walnut flavor, and buttery texture. This caviar is much more expensive than other caviar and is unique among caviar types.

Ossetra caviar

Made from 3 types of fish with a wide range of colors and flavors

  Acitra caviar is obtained from 3 types of sturgeon fish native to the Caspian Sea: 1- Persian sturgeon (Acipenser persicus)-Chalbash (Acipenser gueldenstaedtii) and 3-Shipe (Acipenser nudiventris).

The third type of fish above (sheepfish) is not commonly farmed in Iran, and Iranian Ossetra caviar is produced from the first two types. Russian Ossetra caviar and Persian Ossetra caviar are also known as Chalbash caviar. The characteristic of these caviars is their color, which ranges from light to dark brown and sometimes a rare golden color. The general size of this caviar is from 2.7 mm to 3.2 mm, its texture is thick and creamy, and it has a strong buttery flavor.

Sevruga caviar

A gem with the closest taste to Beluga caviar, unique to the Caspian Sea and beloved by old and genuine caviar lovers.

This caviar is obtained from the starry sturgeon (Dracul, Acipenser Stellatus or Starry Sturgeon). This fish is also native to the Caspian Sea and due to the abundance of catches from the Caspian Sea and its fame, it is mistakenly referred to as all species of starry sturgeon, while starry sturgeon is only one of the five species of sturgeon in the Caspian Sea. This caviar has long been very popular among Americans. Its size is between 1.8 mm and 2.4 mm, and its characteristics include a sweet, authentic taste, very similar to beluga caviar, and a light gray color.

Baerii caviar

Reasonable price and good quality

Sturgeon caviar is obtained from the sturgeon (Acipenser Baerii or Siberian Sturgeon). Sturgeon caviar is a great option to experience the luxurious taste of caviar at a more affordable price. This fish is not native to the Caspian Sea, but about fifteen years ago, Iranian fisheries introduced this fish to sturgeon farms. This fish is raised in most farms in the world. The low age of maturity of the fish and its raising in most farms in the world are the reasons for the lower price of this caviar compared to other caviar. The low price and the presence of all the valuable properties of caviar have increased its consumption among consumers. Sturgeon caviar is usually available in sizes of 2.4 mm to 2.9 mm and is gray in color and rarely brown. The delicious hazelnut flavor with a thick buttery texture is one of the prominent features of this type of caviar.

Types of caviar packaging
